Coconut Cake & Coconut Frosting
This is truly a delicious cake. It's moist, sweet and always a big hit at a party. Also, it doesn't contain egg.
COCONUT CAKE
*4 oz of butter (at room temperature).
*1 cup of granulated sugar.
*1 teaspoon of vanilla.
*1 cup of Coconut powder (flour). This is available at Asian Markets and Indian
Markets.
*1/2 cup of hot water.
*2 teaspoons of lemon juice (I use REAL LEMON as found in the little
lemon-shaped bottle in the cooler section).
*1 cup of milk (preferably whole milk).*1 1/2 cups of plain white flour.
*1 1/2 cups of plain white flour.
*1 teaspoon baking powder.
*1 teaspoon baking soda.
*Pinch of salt.
*COCONUT ICING RECIPE (see below this recipe).
Cream together the butter, granulated sugar and vanilla until the mixture is
creamy.
Blend the coconut powder with the 1/2 cup of hot water.
Gradually add the coconut mixture to the butter and sugar mixture.
Add the lemon juice to the milk, to sour the milk (very important!)
Sift the flour, baking powder, baking soda and salt, and then add this to the
creamed mixture, alternately with the soured milk.
Spoon the cake batter into a larger rectangular cake pan. (Be sure to grease
the pan!)
BAKE AT 355 DEGREES, OR UNTIL A TOOTHPICK CAN BE INSERTED AND COME OUT CLEAN.
Frost with the following frosting recipe.
COCONUT FROSTING MIX
*4 oz of butter at room temperature.
*2 1/2 cups powdered sugar.
*4 TB coconut powder.
*2 TB hot water.
Beat the butter until it's creamy.
Sift the powdered sugar in a bowl (to sift, just whisk about with a wire
whisk).
Blend the coconut powder with the 2 TB hot water.
Blend the icing sugar alternately with the coconut mixture to the creamed sugar.
Mix until it come to a spreadable consistency.
